I found this recipe on Facebook, and adapted. It was so easy and it's so delicious...even warmed up left overs.


CHICKEN BREASTS STUFFED WITH SPINACH AND FETA

Spinach Chicken Breasts

Ingredients:

  • 4 medium boneless chicken breasts
  • 6 oz feta cheese
  • 1 package frozen spinach
  • 4 green onions
  • 1/4 cup mayo
  • 2 T Knorrs Chicken Boullion
  • 1/4 t garlic powder
  • 1/2 t black pepper
  • bacon slices

Directions

  • Cut pocket in chicken breasts
  • Squeeze water from thawed frozen spinach
  • Mix spinach, feta (I used basil, tomato flavored feta), chopped onions, mayo, boullion, garlic powder and black pepper
  • Stuff into chicken pockets
  • Wrap with bacon
  • Place on foil lined baking sheet with stuffed side up
  • Cook at 375 for about 1 hour or until done.
